Crispy chick’n with mango salsa and cauliflower rice

Ingredients:
1 package seven grain crispy tender
1 bag of cauliflower rice, (or do your own by placing cauliflower chunks in a food processor and pulse until broken down into rice-size pieces)
Frozen mango
Tomatoes
Fresh cilantro
1/2 lime
1 mashed garlic clove
Onion
Chili flakes
Black pepper
1 spoon olive oil
Sweet chili sauce
Butter (vegan)
Salt
Let’s get started!
1. Let’s start with the mango salsa. Thawn the mango and chop it. Chop the toamtoes, onion and cilantro. Mix them all together with the mango and add the mashed garlic to the mix. Add lime juice and olive oil to the mix and kind of massage the mix with your fingers so you press out all the juice from the mango and tomatoes. Add chili and pepper.
2. Boil the “rice” for one minute, add 1 spoon of butter and salt when it’s done.
3. Cook the seven grain crispy tenders by following the instructions on its package 🙂
4. Serve the cauliflower rice with the mango salsa and seven grain crispy tender. Enjoy
