It’s officially cold outside, which can only mean one thing: get home from work or school, cook a delicious soup and cuddle up on the couch with someone or something you love (your cat, boyfriend or girlfriend, a blanket) and watch Netflix, while eating that delicious soup.
You’ve probably guessed it by the title of this post and the intro… This is a recipe for that delicious soup we were talking about. It’s super easy and fast, which means more time for you to enjoy the cold evenings! This recipe is meant for 4 portions, but you can change up the amounts to match your needs.
2 garlic cloves
Half of an onion
500g tomato sauce
2 teaspoons of dried thyme
700 ml hot water mixed with 3-4 vegetable stock cubes
1 spoon of cornflour
4 dl vegan crème fraîche
1 pack of Fishless Filet
Chop the onion, garlic, and potatoes into big pieces. Pour some olive oil in a big pot and put it on the stove. When the oil is hot, put the onion, garlic and potatoes in the pot and cook it on medium heat. When the onion has a nice golden color, add the tomato sauce, thyme, salt, and pepper in the pot. Then mix the cornstarch with 2 spoons of water, and then add it to the soup. Add the stock and vegan crème fraîche. Finally, fry the Fishless Filet by following the description on the packaging. When it’s done, chop it into big pieces and add it to the soup. Serve the soup with some vegan aioli. Enjoy!
